Recipe for diet, Pop Padang Chicken 

Favorite menu at the Padang restaurant. The taste is very similar to that of the Padang restaurant. It's best to use free-range chicken. Originally, at a Padang restaurant, it was served with a red chili sauce.

The specialty of pop chicken that distinguishes it from other chicken preparations is its white color with very tender meat. The savory taste of this dish is obtained from the boiling process using coconut water and various spices.

Ingredient

  •  Young chicken, cut into 4 parts, skin removed, 1 tail 
  • 1/2 fruit lime 
  • Coconut water (800 ml) 
  • 2 pieces bay leaf 
  • 1 stick lemongrass 
  • Pepper powder—1 tsp. 
  • Sugar-1 tbsp. 
  • Cooking Oil that are Good for Health,  2 tablespoons
  • 3 cm of bruised ginger 
  • Garlic, roughly chopped—6 cloves 
  • Salt—2 tsp. 
  • Chilli sauce 
  • Curly red chili-ten pieces 
  • 3 pieces cayenne pepper 
  • Tomatoes-2 pieces 
  • 6 grains shallots 
  • Salt—1 tsp. 
  • Cooking oil—5 tbsp 
  • Water-5 tbsp.

How to cook

  1. Coat the chicken with lime juice and leave for 10-15 minutes.
  2. Put in the pan: coconut water, finely chopped garlic, ginger, bay leaf, lemon grass, salt, pepper and sugar. Stir to mix well.

  3. Cook until the chicken is thoroughly cooked (about 20 minutes for young chicken).
  4. While waiting for the chicken to cook, prepare the sambal. Fry red chilies, cayenne pepper, shallots, and tomatoes until wilted, then remove and set aside to cool.
  5. Blend the chili ingredients along with the oil and add water. Then saute and sprinkle with salt. Cook the sambal until the spices are fragrant and popping. Set aside
  6. Heat the oil (until it's warm enough, not too hot), fry the chicken for a while while pouring oil, remove and drain.
  7. Serve popped chicken with sambal and fresh vegetables.

TIPS

  1. You can also use chopped chicken, with a shorter cooking time, which is only 10 minutes. Only after that can it be directly fried.
  2. Fry the chicken pop briefly in warm oil, so that the texture of the chicken remains soft.
  3. If you want the chicken to be more tender, boil it in a pressure cooker.
